Walnut & Greek yoghurt banana muffins

Simple doesn’t mean boring with this easy yet irresistible recipe for healthy banana nut muffins.

Ingredients:

  • Oil (sunflower or canola) x 2 tablespoons
  • Cinnamon (grounded) x 1 teaspoon
  • Bananas (large/overripe and mashed) x 3
  • Baking soda x 1 teaspoon
  • Canadian maple syrup x ¼ cup
  • Non-fat plain Greek yoghurt x 1/3 cup
  • Kosher salt x 1 pinch
  • Walnuts (toasted and finely chopped) x 1 cup
  • Soy milk x 50ml
  • Gluten-free plain flour x 1 ½ cups
  • Light brown sugar x 1/3 cup
  • Pure vanilla extract x 1 teaspoon

Method:

Preheat oven to 170°C. Grab a muffin tin and lightly spray with non-stick oil. 
Mash the bananas into a large mixing bowl. Then whisk in the soy milk, oil, yoghurt, maple syrup, brown sugar and vanilla extract. Once mixed, add the cinnamon, flour, baking soda and walnuts. 
Fill the muffin tin cups with the mixture, then bake for 20 minutes or until golden. 

Healthy banana nut muffins with pecans

Not only is this recipe irresistible, but can also be easily swapped with your favourite ingredients! They can also be quickly microwaved in the morning for a quick and healthy breakfast. 

Ingredients:

  • Baking powder x 1 teaspoon
  • Salt x 1 pinch
  • Vanilla extract x 2 teaspoons
  • Baking soda x ½ teaspoon
  • Gluten-free plain flour x 2 cups
  • Banana (mashed) x 2
  • Honey x 2 tablespoons
  • Pecans (finely diced) ¼ cups
  • Soy milk x ¼ cup
  • Eggs (only the whites) x 2
  • Unsalted butter (melted) x 1 tablespoon


Method:

Preheat the oven to 165°C. 
Spray a muffin tin with non-stick cooking oil. 
Grab a large mixing bowl and whisk in the baking soda, flour, salt and baking powder. 
Grab another mixing bowl and whisk in the vanilla, butter and eggs. Once mixed, whisk in the honey and mashed banana. Slowly and gradually whisk in the soy milk and flour. 
Gradually mix and combine both bowls together until fully incorporated. Then fold in the pecans.
Fill the muffin tin with the mixture and sprinkle some extra pecans on top. Bake in the oven for 21 minutes or until the centre is firm to the touch. 
Allow to cool for at least 10 minutes before serving.
